Opening Thursday, October 1st 2020, renowned Head Chef Caleb Azuka plans to keep serving up his unique version of Italian food with a new spin on the name and the venue. Opening as Restaurant Caleb, the restaurant will offer two very different experiences; the rooftop with an intimate VIP area for no more than 20 people, and the downstairs area offering the traditional a la carte menu to a larger crowd.
To christen the new place, Chef Caleb has created a new dish: The Floating Cheese. First, he hand-makes a mozzarella ball stuffed with smoked truffle and basil, then he blows it up like a balloon (with helium!) and attaches a string of prosciutto di Parma and smoked peppers before tying it to a spoon to hold it down. The finished product looks, you guessed it, like a floating ball of cheese. We dare you to find anything like it anywhere else in Perth!
A bit of a jack-of-all-trades, Chef Caleb plans to take a turn into bar territory, with the Restaurant Caleb & Bar’s new rooftop transforming into a local watering hole when the clock hits 9.30pm – after dinner service, of course. Local musicians have the floor on Friday evenings, with Saturday evenings reserved for acts from out of town. To top it off, the rooftop will also be a karaoke bar every night of the week.
In January 2020, The Corner Italian was featured as a WA Readers Choice award winner in the Australian Good Food Guide for their 5-course degustation menu, featuring Chef Caleb’s famous handcrafted, truffle-honey infused burrata. With the five courses shown in the video above, the final dessert course is the real showstopper. Showing his flare for presentation, Chef Caleb lays out the icey, chocolate-coated gelato ball on the table in front of you, drizzling dry ice on top. Sadly, this is off the table for now, but if it’s anything to go by, their next degustation menu will be a treat!
